Summer Squash Pizza

summer squash pizza recipe
As summer begins to wind down, I have been trying to work in all our favorite summer recipes while I can. We usually have pizza once a week on Fridays, so I am trying to fill the next few Fridays with a few summer pizza recipes. After find squash for a great price at the store, I stocked up. It’s one of my favorite vegetables to add to our cauliflower rice (more about cauliflower rice here) which has been our go-to for weeknight meals lately. Having some squash left over, I decided to incorporate this vegetable into a pizza. This Summer Squash Pizza is a fresh and delicious summer pizza recipe.

Summer Squash Pizza

There is nothing like fresh vegetables in the summer. And who says you can’t enjoy these seasonal vegetables on your pizza, too! While this pizza only has a few ingredients, it definitely isn’t lacking in flavor. Featuring zucchini, yellow squash, grilled corn, goat cheese and fresh basil, the combination of ingredients have summer written all over it. Next time I make this pizza, I think I will add a fresh squeeze of lemon on top of the pizza, right before serving. Talk about freshness!
Add another layer of summer to this recipe by grilling your pizza on the grill. I shared how I grill pizza in this post. It’s a delicious way to enjoy pizza during the warmer months!

Instructions
  1. Preheat the grill over medium-high heat. Remove husks and silk from the corn. Place the corn directly on the grill, keeping an eye on the corn. Continue to turn the corn so that all sides of the corn begin to brown for about 5-10 minutes. Transfer the corn to a plate and cut the corn off the cob; set aside.
  2. Preheat the oven to 400 degrees. Oil or spray with cooking spray your pizza pan or stone. Spread out the dough. Drizzle the dough with olive oil. Scatter the zucchini and yellow squash around the pizza, leaving an edge for the crust. Season the squash with salt and pepper. Place in the oven and cook for 10 minutes. Remove from the oven and sprinkle with the crumbled goat cheese. Place the pizza back in the oven for another 10 minutes, or just until the crust begins to brown. Remove from the oven and top with the grilled corn and fresh basil. Add a squeeze of lemon, if desired. Serve and enjoy!
