Happy Tuesday, friends! With the Super Bowl this weekend, I wanted to share a quick and healthy appetizer idea for the big game. Buffalo Cauliflower is a great way to get the flavor of wings but without all the calories. And this recipe features baked cauliflower rather than fried so you won’t have to worry about over indulging.
By now, I’m sure you probably think I am cauliflower obsessed. I have shared countless cauliflower recipes here on the blog and not just because it’s one of my favorite foods. Cauliflower has the ability to take on the taste and flavor of whatever you decide to mix with it — whether it be cheese for Cauliflower Mac and Cheese (recipe here) or buffalo sauce for this healthy appetizer. Because my love for cauliflower runs deep, I have been wanting to give Buffalo Cauliflower a try for ages. But, most of the recipes I found for this "healthier" recipe featured fried cauliflower. After some trial and error, I came up with this recipe that features crispy cauliflower that was baked in the oven.

I am always looking for new and healthier ways to enjoy some of my favorite splurge dishes. Buffalo chicken wings are probably one my favorite appetizers, so needless to say I’ve been looking forward to trying these. Preheat oven to 450 degrees. Toss the cauliflower florets in olive oil. In a large bowl, mix the ranch dressing packet with the water. Add the cauliflower to the ranch mixture, tossing to coat the cauliflower completely. Bake for 20-25 minutes. Meanwhile, melt the butter in the microwave and whisk in the hot sauce. Remove the cauliflower from the oven and pour the butter and buffalo sauce mixture over the cauliflower, tossing to cover the cauliflower completely. Bake for another 5-7 minutes until the cauliflower begins to brown and become crispy. Serve with a side of ranch or blue cheese dressing and celery. Enjoy!
