I have shared my love for weeknight dinners on the grill before (most recently in this post). Since we had a few warmer days in March, we have already used the grilled quite a bit this spring. I made this Avocado Caprese Chicken a few weeks ago and couldn’t wait to share it with all of you. This easy grilled dinner is perfect for weeknights or anytime you are looking for a quick dinner. Pair it with a salad, rice or even pasta, this Avocado Caprese Chicken is a new favorite in our house.

Avocado Caprese Chicken

There are few foods that I love more than the mixture of tomatoes, basil and cheese. However, throw avocados into the mix and it’s the ultimate combination! A few weeks ago, I bought chicken breast at Costco and was trying to come up with ways to use up all the chicken. As a side note, I love that the chicken breasts at Costco come in packs of two. Perfect for freezing and thawing! Anyways, I saw a marinade I had in the refrigerator that I totally forgot I had. Cilantro lime marinade. While this is a Wegmans brand marinade, I did find a similar marinade here. If you have a Wegmans close by, you need to check out this marinade!
With such a fresh and tangy marinade, I knew I wanted to top the chicken with other fresh flavors. Enter my favorite combination. The tomatoes and avocados combine for a creamy spin on the traditional caprese salad and the melted mozzarella over the chicken is the perfect touch. I topped each chicken breast with chopped basil (you can use dry if you don’t have fresh). I have already made this dish twice in the past few weeks, we are addicted! Avocado Caprese Chicken
Instructions
  1. Allow the chicken to sit in the cilantro lime marinade for at least 30 minutes before grilling. Preheat the grill over medium heat. Place the chicken on the grill to cook. Grill for about 6 minutes on each side or until no longer pink. While the chicken is cooking, add the tomato, avocado and lemon or lime juice to a small bowl, tossing to combine. Once the chicken is finished cooking, remove from the grill and transfer to a clean plate. Place a slice of mozzarella cheese on top of each chicken breast and top with the avocado and tomato mixture. Top the chicken with the chopped basil and serve.
